Steps

  1. Freeze Tofu If Time Permits: If you have time, freeze the tofu in its original packaging for 4 hours or overnight. Then, thaw it in the microwave for 2-3 minutes or overnight in the refrigerator.
  2. Buffalo Chick'n Sandwiches: Drain the liquid from the tofu and press it for 15 minutes. I do this by wrapping it in a kitchen towel and then placing something heavy on it.
  3. Buffalo Chick'n Sandwiches: Slice the tofu into 4 slabs and place them in a single layer in a large shallow dish. Mix the marinade ingredients together and pour it over the tofu. Flip them over and let it soak for 15 minutes. Flip them back over halfway through.
  4. Buffalo Chick'n Sandwiches: Stir the seasoned breading ingredients together in a wide, shallow bowl.
  5. Buffalo Chick'n Sandwiches: Shake off the excess marinade from the tofu, and place it in the dry breading. Pat the dry breading into the tofu and then repeat this process so that there are two layers of breading.
  6. Buffalo Chick'n Sandwiches: Cook them in the air fryer or pan fry them. I prefer the air fryer because I find it to be easier, less messy, and the batter stays on better.
  7. Air Fryer Instructions: Set the air fryer to 375°F and spray the basket with cooking oil. Add the tofu patties and then spray the tops with more oil. Cook the tofu for 20 minutes. Flip them halfway through and lightly spray them again. The tofu patties are ready when they are lightly browned.
  8. Pan Fry Instructions: Heat 1/2 inch of cooking oil in a large cast iron or nonstick sauté pan over medium-high heat. The oil should be around 350°F or until it sizzles when dropping some batter into it. Fry the tofu for 3-4 mins on each side or until they are lightly browned.
  9. Toast the insides of the buns on a skillet over medium heat. Heat the buffalo sauce in a pan over medium low until it’s warmed. Gently dip the buffalo tofu into the sauce on both sides. Assemble the sandwiches and enjoy!
