Grilled Wisconsin Beer Brats With Peppers and Onions

Bratwurst simmered in lager and finished over a hot grill, piled into toasted buns with buttery peppers and onions.

Ingredients
- 2 cans lager beer
- 6 bratwurst
- 2 tbsp unsalted butter
- 2 yellow onion
- 1 red bell pepper
- whole grain mustard
- 1 green bell pepper
- kosher salt
- 6 brat buns
Steps
- Combine the beer, half the sliced onions, and the brats in a pot and simmer gently so the sausages cook through without splitting.
- Meanwhile, melt the butter in a skillet and cook the remaining onions and the peppers with a pinch of salt until soft and browned at the edges.
- Heat a grill to medium-high while the brats finish their beer bath.
- Lift the brats from the pot and grill them, turning often, until the casings are crisp and deeply browned.
- Toast the buns cut side down on the grill until just golden.
- Tuck a brat into each bun, pile on the peppers and onions, and finish with a stripe of whole grain mustard.
